I had no idea quite how AMAZING these bhaji burgers would turn out! Easy to make and cooked in an airfryer, they are gluten free and easily made vegan too.

You have this epic contrast of a crispy golden exterior and a soft, spicy interior. Paired with a squishy gluten free bun (Schar Brioche are my go to for shop bought or my Fluffy White Rolls for homemade), cooling mint raita, sweet mango chutney and crisp lettuce, they’re absolutely banging.

How Do I Make Them Vegan?

The burgers are naturally vegan, it’s simply the raita that needs tweaking. Be sure to use a plant based yoghurt (I would recommend coconut yoghurt, the flavours are brilliant for this), then simply replace the dairy yoghurt when making the raita.

Can I Oven Bake These Bhaji Burgers Instead of Air Frying?

Yes absolutely, go for 180C in the oven for about 30 minutes until crisp and golden. Turn them halfway through cooking.

Air Fryer Bhaji Burgers Recipe

This recipe will make enough for 2 people (add a side of chips if you want, but one of these burgers properly fills me up). If you want to make more/fewer portions, simply double/halve the ingredients and follow the same method.

Air Fryer Bhaji Burgers (GF)

Epic bhaji burgers cooked in an airfryer (or oven), with mint raita and mango chutney. Gluten free and easily made vegan.

Ingredients

For the bhaji burgers

  • 2 medium-sized brown onions
  • 1 tsp fine salt
  • 40ml vegetable oil or melted butter or ghee
  • 100g gram flour
  • 1 tsp ground tumeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 0.5 tsp chilli powder (optional, for a bit of spice)
  • 50ml water

For the mint raita

  • 60ml Greek yoghurt or coconut yoghurt
  • 1 tsp nigella seeds
  • 1 tsp dried mint

To serve

  • 2 gluten free burger buns
  • 4 baby gem lettuce leaves (washed and dried)
  • 2 heaped tsp mango chutney
  • Sliced red chilli (optional)

Instructions

  1. To make the bhaji burgers, very finely slice the onions and add to a mixing bowl with the water, oil, salt, gram flour, tumeric, cumin, coriander, chilli (if using) and garam masala. Mix well to completely combine.
  2. Cut two 15cm sqaures of non-stick baking paper and lay them on a plate. Divide the bhaji mixture into two and shape into two patties, one on each square of baking paper. Use a large flat spatula to transfer them to your airfryer basket.
  3. Air fry at 180C for 20 minutes, turning half way through. After the first 5 minutes, the burgers will have firmed up and you can brush them with a little oil at this point, if you wish them to be extra crispy.
  4. To make the raita, simply mix together the yoghurt, dried mint and nigella seeds. Set aside.
  5. Time to assemble the burgers. Slice the buns (toast lightly to refresh, or heat slight in the airfryer basket if needed), then spread the mango chutney on the bottom half of each (cut side). Lay the lettuce on top and then place the cooked bhaji burgers onto the buns. Spoon a generous amount of raita onto each and finish with sliced red chilli if you like it spicy, before placing the top of the buns on the burgers. Enjoy!
