This simple plum and apple compote takes a couple of hours to make but is simple and can be left to cook on a gentle heat while you get on with other takes at home. It is a fab standalone with natural yoghurt and granola, but also serves as a base for my danish pastry recipes and can be used as a centre filling for special cupcakes or a super quick plum and apple crumble.
Ingredients
- 300ml water
- 10 plums
- 3 apples
- 4 level dessert spoons of vanilla-infused caster sugar
Method
- To make the compote, first add the water and sugar to a non-stick pan and bring to a boil over a low heat. Stir occasionally and cook for 10 minutes until the sugar has dissolved.
- In the meantime, wash the fruit and then chop the plums into small pieces (each plum into 8-10 pieces) and peel, core and grate the apples. Best to do the grating into a large bowl, otherwise you will end up with apple all over your kitchen.
- Add the chopped plums and grated apples to the pan and stir so that the water is just about covering the fruit.
- Bring to the boil and then turn the heat right down to low. Leave to cook for 1-1.5 hours until the fruit has broken down. You should give it a good stir every 10 minutes or so and keep an eye on it to ensure the fruit doesn’t burn. Gentle heat is the key.
- Once cooked, take off the heat and leave to cool before transferring to a tupperware. You can store in the fridge and this apple and plum compote keeps for around 1 week. Enjoy!
